| Pupusas! I've been making these about a month now buy still trying to perfect it, it's basically a stuffed corn tortilla. I use corn flour (I use Maseca which is a perfect mix for corn tortillas/pupusas (2 cups)) and I mix it with 2 cups of water into a bowl. Mix it around with your hands till it has a wet dough consistency. It might take you a few tries to get it right but just add more flour if too wet or more water if too dry. You are just going to have to try and fail a few times before you can get it right like I have. You can make a filling out of anything that you think would taste good. The simplest one you can make is out of shredded cheese. The more traditional ones have in them a Chicharrón (fried pork rinds) mix or Frijoles Refritos (re-fried black beans) in them. I made up a mix with tuna, shredded cheese and oregano that turned out pretty good but that's only if your into the whole "listening to me" thing. To cook the pupusa, heat up a griddle or a nonstick pan on med-high heat beforehand. Pour a bit of oil in the pan just to make sure the Pupusas don't stick. To shape them into discs you can use two methods: 1) You roll it in your hands to make a small dough ball and then proceed to slap it around between both hands till you get a flat round one inch disc. 2) Or you can buy a goddamn tortilla press. (which flattens them even and quickly) I use the first method because I don't have a press and it's to expensive to buy one. Making it by hand is one of those things that is anyone can do but it takes practice to master. After you have flatted it out, put it in the pan and griddle and leave roughly 50 seconds on each side. It should be eaten IMMEDIATELY (or give it a second to cool. Do whatever you want, I'm not your mother) It's usually served with this cabbage slaw and a really thin tomato sauce on top Slaw recipe I use: http://www.whats4eats.com/salads/curtido-recipeI've never made the tomato sauce so you'll have to find a recipe yourself! | The recipe I'm about to give is beautiful in its simplicity and it makes a good side dish.
Spinach and cannellini beans
What you'll need:
1-2 cloves of garlic (depending on how much you like garlic) 1 bag of fresh spinach ~12 oz 1 can of cannellini beans
Step 1: chop up the garlic into small pieces Step 2: wash the spinach if necessary Step 3: Drain the cannellini beans Step 4: Put garlic, cannellini beans, and as much spinach as will fit into a frying pan (you probably won't be able to put the whole bag in at first but spinach cooks down a lot so you will use it all). Step 5: Cook on medium to medium-high heat stirring so as to get uncooked spinach to the bottom of the pan. Add more spinach as space becomes available. Step 6: When all the spinach is thoroughly cooked (it will look like spinach from a can at this point) you're done!
Makes ~3-5 servings | |

Pretty much any food that isn't already on pizza and covered in cheese should be. Can't go wrong. | |
